The story of Acetaia Pecoraro begins about a quarter of a century ago, when Herwig Pecoraro studied singing in Modena, Italy. This study not only brought him to the "Vienna State Opera" as a tenor, but also awakened in him, as a connoisseur, the interest and enthusiasm for a local product that was hardly known in our country at the time. Since then, he and his family have been involved with the culture and philosophy of producing this "elixir" in Klosterneuburg. The production of Aceto Balsamico requires an environment that is freezing cold in winter and scorching hot in summer for years of storage. Sophisticated solar technology has created a Mediterranean attic climate in which Herwig Pecoraro and his wife Waltraud have been producing Aceto Balsamico since 1997.
  • An essence is created: For Aceto Balsamico Pecoraro, freshly pressed must from Grüner Veltliner is reduced to a third of its volume over an open fire. The resulting concentrate is stored in barrel batteries of 20 to 60 litres, consisting of various woods, such as oak, acacia, mulberry, chestnut, cherry, ash or juniper.
